Cinnamon Roasted Almonds

Lets end this week with a tasty treat. This snack is not as healthy as the the rest of our snacks but all work and no play makes staying fit a job. Enjoy!!!!
Ingredients

1 egg whites
3 tsps vanilla extract (optional)
2 cups almonds (unblanched)
1/6 cup sugar
1/6 cup brown sugar (packed)
1/2 tsp salt
1 tsp ground cinnamon

Directions:

In a large mixing bowl, beat egg whites until frothy; beat in vanilla. Add almonds; stir gently to coat. In a separate bowl combine the sugars, salt and cinnamon; add to nut mixture and stir gently to coat.
Spread evenly into greased 15-in. x 10 -in. x1 inches baking dish. Bake at 300 for 25-30 minutes or until almonds are crisp, stirring once. Cool. Store in airtight container. 

Cinnamon Orange


I'm not a huge fan of oranges but this snack is most definitely worth trying. This combination of sweet and spice is like no other. You should most definitely try this snck 


Makes: 4 servings

INGREDIENTS
4 navel oranges
2 tablespoons orange juice
2 tablespoons lemon juice
1 tablespoon sugar
1/4 teaspoon ground cinnamon

PREPARATION
With a sharp knife, remove rind and white pith from oranges. Cut each into 5 or 6 slices and arrange on 4 plates. Whisk together orange juice and lemon juice, sugar and cinnamon. Spoon over the orange slices.

Cinnamon Chips



Ingredients



  • 8 Multi Grain tortillas - Fajita Size shopping list
  • 1 Tbls. cinnamon Powder + 2 Tbls sugar - Mixed together shopping list
  • 1/2 cup Pure apple juice shopping list

How to make it

  • Pre heat oven to 350 degrees.
  • Stack tortillas ontop of each other and slice like a pie, into 8 pieces.
  • Line cookie sheet with parchment paper and place cut tortillas in a single layer on sheet.
  • Brush each slice, lightly with apple juice. Sprinkle generously with cinnamon sugar mixture.
  • Bake for about 17 minutes.
  • Let cool completely. Serve plain or with a fruit salsa.

Honey, Cinnamon & Brown Sugar Oatmeal

Delicious warm oatmeal that's a sweet and wholesome way to start the day.

Ingredients

  • 1/2 cup oatmeal
  • 2 tsp brown sugar
  • 1 tbsp clover honey
  • 1 tsp cinnamon
  • 1 dash salt
  • cup water

Directions

  1. In a bowl, add oatmeal, water, and salt.
  2. Microwave according to directions on container (usually 1 1/2 - 2 minutes).
  3. Add brown sugar, honey and cinnamon.
  4. Stir well, let cool for 1-2 minutes, and enjoy!
  5. Note: calories diminish with use of low calories sweetener (like Splenda Brown Sugar Blend) and any other ingredient you can find that is lower calorie. Also, add other ingredients, if desired like raisins, slivered almonds or bananas.

Cinnamon Apple Chips







Ingredients:
3 apples (whichever you’d like; note: Red Delicious do not bake well)
1 tablespoon sugar
1 teaspoon cinnamon

Directions:

  1. Preheat oven at 250 degrees. 
  2. Cut apple as thin as possible (easiest with a mandolin, but a knife works just fine). Mix sugar and cinnamon. 
  3. Lay apple slices on a baking sheet, lined with parchment paper, making sure not to overlap on each other. If it does not fit on your baking sheet, you can use two, and bake at the same time. Sprinkle the cinnamon-sugar mix on top of the apple slices. 
  4. Bake for 1 hour, then turn apple slices over. Bake for an hour more, peeking in at the 30 minute mark to check in on the smaller pieces that might cook faster. If they are crisp already, take them out. All should be done after the second hour. Don’t worry if they are not initially crisp. They will crisp up as they cool down. 
  5. This is a super simple recipe, and it makes a healthy snack you can take anywhere with you. Also, if you have lil’ ones, this is the perfect snack to stick in their lunch box. If you would like these to be even healthier, you can leave the sugar out, and just sprinkle with the cinnamon. Enjoy!
